crab stir fried with curry
powder
Ingredients
- 1 whole cooked and dressed crab
- 1 egg
- 3 tablespoons chilli oil
- 3 tablespoon curry powder
- 1 teaspoon dark soy sauce
- 1 tablespoon oyster sauce
- 60ml double cream
- 3 tablespoons vegetable oil
- 1 stalk celery, thinly sliced
- 2 tablespoons shallots, finely chopped
serves 2 - 4
Preparation
Remove the crab's legs and claws and scoop out and reserve the
white meat from the body. Reserve the shell. Mix all of the ingredients
except the crab, celery and shallots in a saucepan. Heat and cook
for three to four minutes. Remove from the heat and set aside.
Heat the oil in a wok or frying pan. Add the legs, claws and crabmeat
and stir fry for a couple of minutes. Add the celery and shallots
and cook a minute longer. Pour the reserved sauce over the mixture
and stir fry for 1-2 minutes.

Pour the mixture onto a plate and garnish with the shell.
