DeDos Restaurant offers one of the best dining experiences in Phuket. This rather small venue is located on Tinlay Place near the entrance of Laguna Phuket Resort Complex in Bangtao. Run by Pablo Blattman, a Swiss-Bolivian Chef who studied cuisine at the prestigious Paul Bocuse Institute near Lyon in the southeastern part of France, DeDos is a gastronomic restaurant serving dishes blending French cooking techniques with Mediterranean and Asian – mostly Japanese and Thai – influences.
Pablo’s passion for cooking and blending flavors produces dishes of extremely subtle tastes with flavours that explode in the mouth, leaving his restaurant guests ecstatic. In Phuket, Pablo Blattman is a master in the art of cooking but, at the same time, is friendly and humble. DeDos is the perfect place to sample fine dining ‘à la Française’ with an Asian twist.
Set in a narrow two-storey townhouse-like building, DeDos is dressed in black-white-red and features three dining areas: the front door offers al fresco dining for up to 12 guests; the first floor dining room has a long bar counter on its right and four tables on its left; and upstairs, a mezzanine – available for private parties – can host up to 24 dinner guests. DeDos’ décor is in the same image of its Chef-owner: it doesn’t try to show off with extravagant or luxurious settings; it is simply stylish and cosy, in a way to keep the lead role confined to the plate.
The atmosphere of DeDos is in the same vein; casual and relaxed with a classy twist: background Latino house music is played at very low volume, leaving diners to enjoy their meal in a cool yet sophisticated ambience. The service is top notch, very attentive yet noninvasive; Pablo as well often comes out from his kitchen to talk with and make recommendations to his guests.
DeDos menu is pretty short, hosting 43 dishes available in four categories – starters, salads, pasta, main, and dessert. Revisited year after year, it nevertheless features a good list of immovable favourites such as ‘tartar duo’ (tuna and salmon tartars, Asian and European style – 350 baht); foie gras ravioli with porcini mushroom sauce and truffle oil (490 baht); lobster bisque soup flambéed with Pastis and its prawn ravioli (390 baht); DeDos tuna (pan-seared yellow-fin tuna filet in cashew nut black pepper robe served with taboulé and wasabi-crème fraiche – 790 baht); tournedos Rossini (Angus 120-day grain-fed beef tenderloin topped with pan-seared foie gras, truffle-port wine sauce, veggies and tagliatelle – 1,300 baht); and for the sweet-tooth, ‘moelleux au chocolat’ (warm chocolate cake with a melting heart and strawberry sorbet – 390 baht).
On its side, the wine-list features no-less than 70 old and new world labels, with a superb choice of 11 labels available by glass (from 190 to 350 baht) or half-litre carafe (from 690 to 990 baht).
Summing up, Chef Pablo Blattman’s DeDos Restaurant should be on the bucket-list of every gourmet and Epicureans visiting Phuket; such quality comes at a certain price but this restaurant could easily be qualified as good value for money as the food served here is unforgettable.
